Maldive Fish

Maldive fish flakes are also known as Bonito or dried tuna. It is Sri Lanka’s equivalent of fish sauce. It is used as a flavour enhancer in many Sri Lankan vegetable curries and sambols. Just a sprinkling is enough to add depth and flavour. Pound or grind the flakes to a coarse mix before adding to the curry or sambol.
